when the music is only 2.0 stereo than your AVR system should be able to detect and play just stereo as the output from RPi over HDMI is depends on the source. so even is set to HDMI 5.1 that doesnt mean you have always 5.1 on it. If the source of the media played is 2.0 than you have 2.0 on it
