Login as xbian (password = raspberry)
You are able to change the root password using xbian-config (started by default for the xbian user)
or change it using the command line interface.

Just type:
Terminal
sudo -i
You are asked for a password. Type the password of the xbian user (raspberry)
Now you are root!
To change root's password just type:
Terminal
passwd
You are asked for the new root password twice.
