Another update - seems that the PI just doesn't like the "Sonnics" branded external hard drives from amazon.
Bus 001 Device 004: ID 14cd:6116 Super Top M6116 SATA Bridge Removed the hard drive and put inside another caddy (different chipset) and now the 750 Gb shows perfectly. Managed to clone my old 60gb onto it and its booting as normal. Only problem now is I can't get it to use the full 750 space.
