Here's the content of my /var/log/upstart/rpi-bluetooth.log when running version 5.4.122, after deleting the log file and rebooting:

As a comparison, here's the same /var/log/upstart/rpi-bluetooth.log file when running version 5.1.114 (please, notice I'm swapping SD cards on the same RPi3B+ board to test 5.4.114 and 5.4.122 back and forth, so I'm pretty sure the HW is working fine):
