I'd love to watch Disney+ (well, The Mandolorian) on my big screen, or some youtube channels I follow. is it possible?

It's possible with YouTube I believe but Disney+ is a no go.

All I got when I tried YouTube over AirPlay was the audio - but maybe I’ve overlooked something in settings on each device

Open the Chrome browser.
Click the menu icon in the top-right corner (three vertical dots) and select “Cast.”
Select the “Cast to” option followed by “Cast desktop.”
Select a Chromecast device from the list.
Click the “Share” button to mirror the phone’s screen to your TV.
Open Kodi and start watching content on the big screen.

You can go to Kodi here, there are many good channels for you to learn.
